I am going to place one Cooking rule the wife and I follow when planning our meals and that is as follows.
When planning the items for the meal, vary the colour, flavour and textures to stimulate the appetite and encourage good eating habits.

Soups and Sauces |
Removing oil from the top of soup To remove oil from the top of soup, use a leaf of lettuce. The leaf will absorb the oil, once leaf has served it's purpose throw it away. |
Seafood |
Cleaning Seafood By washing all meats and seafood in lemon juice before cooking helps to clean and improve the taste. I am guessing this is a Trinidadian thing, as I have not heard or seen any of my none Trinidadian friends doing this. |

To Preserve leftover Egg Yolks Place leftover egg yolks into a bowl and add 2 tbsp. of salad oil. The place in fridge. |
Egg Freshness Test Place an egg at the bottom of a bowl of cold water. If the egg lays on its side it's fresh. If it stands at an angle its at least three and ten days old if it stands on ends. If the egg floats its bad and should not be consumed. |
Slicing Hard Boiled Eggs To keep the egg yolks from crumbling when slicing hard boiled eggs. Wet the knife blade before each cut. |
Baking |
Measuring Butter Before measuring butter, shortening,etc. dip spoon in hot water. This will cause the fat to slip out more easily. |
Baking bread When baking bread in the oven place a small dish of water in the oven to keep the crust from getting hard. |
Cutting Hot Cake Instead a piece of thread to slice a hot cake in half instead of a knife. This is a trick I used to see my mother doing all the time when I was helping her bake. You can also use this tip when splitting cake into layers. |
Cake Batter To remove air from cake batter, drop or knock it on the counter. |
Baking If you pre-heat the cookie sheet. baking trays or muffin tins you will get better results. |
Creaming Butter and Sugar Before creaming butter and sugar together, rinse the bowl in boiling water first. They will cream faster. |

Cauliflower If you add teaspoon of milk to the water in which the cauliflower is cooking, the cauliflower will keep its white look. |
