Ever since we came back from vacation my sleep has been off, meaning I am getting too much sleep. The little one wants mommy and daddy to sleep with him which is great. The problem is we both fall asleep and do not get up until the morning. Last night I woke up at 400 and could not fall back asleep, so i decided to make this morning’s breakfast and bento’s.

I started by getting the rice ready, as I knew that would take time. Next, I decided to make Cheese Tamagoyaki, which was interesting as it was my first time. I must say my wife is a good teacher as it came out great. So once I had finished that I need to work on the main dish. I opened a can of chicken breast and stir-fried that with onions, spring onion and eggplant. For seasoning I added mirin, soy sauce, tomato sauce and salt and pepper. It came out just right. Then I placed a few of the carrots from yesterday and sliced up a tomato along with a Kiwi for dessert.

Not bad for my first bento.
