Last Night’s Grilled Chicken Breasts

Well it’s December and it’s not that cold. The daytime temperature is around 15-18 degrees C, whereas the night is around 10 degrees C. All in all it’s alright.

For this morning’s bento we have my grilled chicken breasts from last night’s dinner, sweet potatoes, tamagoyaki, some green stuff and rice. I only made two chicken breasts yesterday, but since I had a lot of seasoning sauce left over I will grill up two more breast for the rest of the week.

Both my son and wife loved the season, so here is the recipe below.

Grilled Chicken Breasts

2 chicken breasts
1/2 cup of oil (I used grape seed oil as that is what I had)
1 chopped chive
1/2 tsp. thyme
1 tbsp. mustard
Juice of one lemon or lime
1 tsp. salt
1 tbsp. sugar
1 tbsp. honey
1 tbsp. soy sauce
1 crushed garlic clove
If my son wasn’t eating, I would have added some pepper sauce. 1 tbsp worth.

1. Put all ingredients except chicken in a pot and heat until boiling. Once boiled remove from heat.
2. Marinate chicken in season sauce for 30 minutes or more, turning occasionally.
3. Grill chicken turning and dip in season sauce occasionally.
4. Grill chicken until the internal temperature has reached 74 degrees C (165 degree F for dark and 160 degree F for white meat).
